This is our "dark roast", or at least our version of a dark roast. In the roasting process, we take this coffee beyond our normal roast level in order to bring down the acidity and increase the roasty notes, while making a clear effort to avoid a burnt or smoky taste. Finca Pacayalito can be found in San Miguel Pochuta, Chimaltenango, Guatemala. The farm is ideally located among rich volcanic soils produced by volcanoes Atitlán, Fuego, and Acatenango. Pacayal is located along the South Coast Highlands and boasts 600 hectares of private natural reserve. The farm is Rainforest Alliance certified and members of reforestation programs like the Asociación de Reservas Naturales Privadas de Guatemala. The Sub-Tropical climate, influenced by the AtitlánCrater Lake and the Pacific Ocean, provides an average temperature of 24° C, which is the perfect environment for great quality coffee. The coffees at Pacayal are shade grown with Chalum, Gravilea, Inga and many other native shade trees.
